    Dr. Jean — I do not mean to be rude — but what is your husband’s negative reaction to Amaranth? I have developed a flour mix with amaranth in it, so this is not just an inquisitive question.

      Hi Mitche,
      My husband responds to amaranth with the same gastrointestinal distress he experiences with gluten exposure. We haven’t had it in over 5 years, perhapsit was just a transient reaction but he is much happier simply avoiding it. Sounds like you have a interesting product launching,
