Cookie Dough Mix

This is a Easy Cookie dough mix recipe to prepare in advance,
Then when the cookie baking mood strikes, you are always prepared

Cookie Mix
Cookie Flour Mix- enough for 3 batches of cookies
  • Stir together till one color:
  • 90 grams pixie dust
  • 60 grams baking powder
  • 25 grams salt
  • 15 grams baking soda
  • 908 grams sugar
  • Then add:
  • 300 grams brown rice flour
  • 195 grams white rice flour
  • 200 grams potato starch
  • 300 grams sorghum flour
  • 195 grams sweet rice flour
  • 115 grams tapioca flour
  1. Stir together till all flours are incorporated and the mixture is an even brown color.
  2. Divide by weight into thirds

  1. Hi Dr. Layton. I just wanted to let you know that I made pumpkin spice cookies using your cookie dough mix recipe. I took 520 grams of your mix, 1 tsp ground cinnamon, 1/2 tsp nutmeg, 1/4 tsp cloves, 1/4 tsp allspice and one 15 oz can of pumpkin purée and mixed them together with an electric mixer. I then used my small cookie scoop and placed them on a parchment lined baking sheet. I pressed each cookie twice with a fork in a crisscross pattern ( like we do for peanut butter cookies). Then I baked them for 15 minutes in a preheated 350 degree oven. When they cooled, I frosted them with gluten free cream cheese frosting and sprinkled them with cinnamon sugar. My while family, and my neighbor, loved them!! Perfect way to celebrate the first day of autumn! Thank you for your cookie dough mix recipe! :)
