I’m excited to be in Anaheim California, enjoying a bit more warmth than at home.

No, mouse ears are not involved, although I can see Magic Mountain from my hotel.

This trip is for business, big business. The biggest natural products show in the world, Natural Products Expo West 2013 is in town.

This show covers the entire Anaheim Convention Center with vendor booths and demonstrations, spreading out into the Marriott and Hilton for educational classes, concerts and conviviality.

On Saturday, I’m fortunate to be on a panel with some amazing gluten-free folks.

Description The L.A. Times recently reported that the gluten-free food market is a $4.2 billion industry. People are buying gluten-free products and ingredients, but are they buying them from you? When customers who lead gluten-free lifestyles visit your stores, are you doing everything you can to provide a safe environment for them? Our expert panel will address the variety of areas in stores where cross-contamination risks are overlooked.

For example, are you:

  • Making sure that bulk foods are not a source of gluten? Do you have procedures in place to prevent cross contamination in bulk bins?
  • How does the deli handle gluten containing products to prevent cross-contamination on the slicer and when serving salads? Do you use two thermometers for temperature checks?
  • Offering additional training for staff to prevent aerosolized flour in the bakery area from entering the store?
  • preventing cross contamination in sandwich making?
  • And…what sort of FDA ruling might we see in the future regarding gluten-free claims?

These are just some of the questions our panel will pose, as well as offer tips and advice to bring gluten-free customers into your store, and getting them to come back!
